We also found that showcasing the social costs of meat consumption also leads to a preference for plant-based \u201cmeats.\u201d<\/p>\n\n\n\n<p>To reach this conclusion, we conducted two online experiments to examine the advertising of plant-based burgers and meatballs. Participants were recruited via the crowdsourcing website Amazon Mechanical Turk.<\/p>\n\n\n\n<p>In the first one, 156 participants were shown one of three commercials for a plant-based burger. They saw either a social appeal (\u201cgood for the environment and animal welfare\u201d), a health appeal (\u201cgood for your health \u2013 no cholesterol and more fiber\u201d) or a taste appeal (\u201ctasty and delicious \u2013 just like a beef burger\u201d). In all three commercials, we presented nutritional information that showed plant-based burgers had similar levels of calories and protein as that of beef \u2013 which <a href=\"https:\/\/www.goodhousekeeping.com\/health\/diet-nutrition\/a29074114\/beyond-burger-nutrition-ingredients\/\">is generally true<\/a> in the real world.<\/p>\n\n\n\n<p>They were then asked to record their burger preference on a scale of 1 to 7, where 1 indicated they definitely wanted a conventional beef burger and 7 meant they definitely wanted the plant-based version.<\/p>\n\n\n\n<p>Participants exposed to the advertising that appealed to their social conscience were more likely to select the plant-based burger than those who saw the health or taste-based ads. Our research found that the social appeals worked because they induced positive feelings of doing something good for society.<\/p>\n\n\n\n<p>The health appeal was ineffective because the nutritional value of the two burgers is so similar. Appealing to taste didn\u2019t work because American consumers believe <a href=\"https:\/\/www.foodnavigator-usa.com\/Article\/2021\/02\/08\/Consumer-perception-of-taste-and-nutrition-of-beef-still-greatly-exceeds-that-for-plant-based-proteins-says-new-report\">the taste of beef is superior to that of plant-based meat<\/a>.<\/p>\n\n\n\n<p>In a second study, we provided 160 different participants with information on the <a href=\"https:\/\/www.theguardian.com\/news\/2018\/may\/07\/true-cost-of-eating-meat-environment-health-animal-welfare\">social and health costs<\/a> of meat consumption. We then asked them to state their preferences for a beef meatball sandwich or a plant-based one on the same 7-point sliding scale. Similar to the appeal to the social benefits, highlighting the costs led to a stronger preference for the plant-based version.<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img src=\"https:\/\/images.theconversation.com\/files\/398501\/original\/file-20210503-23-xo5un5.jpg?ixlib=rb-1.1.0&amp;q=45&amp;auto=format&amp;w=754&amp;fit=clip\" alt=\"Close-up of Burger King menu board with advertisement for the Impossible Whopper\"\/><figcaption>More restaurants are putting plant-based burgers and other products on their menus. <a href=\"https:\/\/www.gettyimages.com\/detail\/news-photo\/close-up-of-burger-king-menu-board-with-advertisement-for-news-photo\/1158507769\">Smith Collection\/Gado via Getty Images<\/a><\/figcaption><\/figure>\n\n\n\n<h2>Why it matters<\/h2>\n\n\n\n<p>Americans on average consumed about 58 pounds of beef and veal in 2019 \u2013 compared with a global average of 14 pounds \u2013 and a recent Gallup poll found that <a href=\"https:\/\/news.gallup.com\/poll\/282779\/nearly-one-four-cut-back-eating-meat.aspx\">two in three U.S. adults<\/a> say they eat meat \u201cfrequently.\u201d<\/p>\n\n\n\n<p>But the production of beef <a href=\"http:\/\/www.doi.org\/10.1126\/science.aaq0216\">creates 60 times the volume of greenhouse gases<\/a> as peas, which is one of the vegetables that <a href=\"https:\/\/www.goodhousekeeping.com\/health\/diet-nutrition\/a29074114\/beyond-burger-nutrition-ingredients\/\">go into meat substitutes such as the Beyond Burger<\/a>. Research has also found that plant-based meat substitutes <a href=\"http:\/\/css.umich.edu\/publication\/beyond-meats-beyond-burger-life-cycle-assessment-detailed-comparison-between-plant-based\">require far less energy, water and land then beef<\/a>.<\/p>\n\n\n\n<p><a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pmc\/articles\/PMC6479556\/\">Growing consumer concern over beef\u2019s large environmental footprint<\/a> is one of the reasons major U.S. casual restaurant chains <a href=\"https:\/\/uproxx.com\/life\/fast-food-chains-serving-plant-based-meat-2021\/\">have been adding meat-like options<\/a> to their menus in recent years. For example, Burger King <a href=\"https:\/\/www.cnbc.com\/2019\/07\/31\/burger-kings-plant-based-impossible-whopper-is-launching-nationwide-this-month.html\">boasts the Impossible Whopper<\/a>, Subway <a href=\"https:\/\/www.livekindly.co\/vegan-beyond-meatball-subs-are-coming-to-subway\/\">offers the Beyond Meatball Marinara<\/a> and Starbucks <a href=\"https:\/\/www.starbucks.com\/menu\/product\/2123236\/single?parent=%2Ffood%2Fhot-breakfast%2Fbreakfast-sandwiches-and-wraps\">sells a breakfast sandwich made with Impossible sausage<\/a>.<\/p>\n\n\n\n<p>But Beyond Meat and Impossible Foods, the <a href=\"https:\/\/www.inc.com\/mary-yang\/impossible-foods-beyond-meat-fake-fish-startups.html\">two main plant-based brands<\/a>, tend to market their vegetarian burgers with claims of tastes and textures that are similar to that of meat.<\/p>\n\n\n\n<p>Our research suggests that highlighting the social benefits of plant-based menu items would convince more consumers to choose them over meat-based options, thus reducing overall meat consumption and greenhouse gas emissions.<\/p>\n\n\n\n<h2>What\u2019s next<\/h2>\n\n\n\n<p>We plan to examine if the effectiveness of social appeals carries over to healthier plant-based menu items such as Hawaiian poke bowls with fake fish.<\/p>\n\n\n\n<p>[<em>Over 100,000 readers rely on The Conversation\u2019s newsletter to understand the world.<\/em> <a href=\"https:\/\/theconversation.com\/us\/newsletters\/the-daily-3?utm_source=TCUS&amp;utm_medium=inline-link&amp;utm_campaign=newsletter-text&amp;utm_content=100Ksignup\">Sign up today<\/a>.]<\/p>\n\n\n\n<p>Also, it would be interesting to conduct cross-cultural comparisons. Impossible Foods\u2019 offerings are now available in Asian markets, including Singapore, Hong Kong and mainland China.
