{"id":27638,"date":"2021-11-21T03:41:00","date_gmt":"2021-11-21T03:41:00","guid":{"rendered":"https:\/\/www.lifeandnews.com\/articles\/?p=27638"},"modified":"2021-11-27T06:37:57","modified_gmt":"2021-11-27T06:37:57","slug":"foods-high-in-added-fats-and-refined-carbs-are-like-cigarettes-addictive-and-unhealthy","status":"publish","type":"post","link":"https:\/\/www.lifeandnews.com\/articles\/foods-high-in-added-fats-and-refined-carbs-are-like-cigarettes-addictive-and-unhealthy\/","title":{"rendered":"Foods high in added fats and refined carbs are like cigarettes \u2013 addictive and unhealthy"},"content":{"rendered":"\n<p><a href=\"https:\/\/theconversation.com\/profiles\/ashley-gearhardt-1253216\">Ashley Gearhardt<\/a>, <em><a href=\"https:\/\/theconversation.com\/institutions\/university-of-michigan-1290\">University of Michigan<\/a><\/em><\/p>\n\n\n\n<p>Every year millions of Americans <a href=\"https:\/\/www.cdc.gov\/nchs\/products\/databriefs\/db389.htm\">try to cut down<\/a> on <a href=\"https:\/\/doi.org\/10.1371\/journal.pone.0232676\">ultra-processed foods<\/a> \u2013 industrial formulations that are <a href=\"https:\/\/doi.org\/10.1017\/S1368980018003762\">typically high in added fat, refined carbohydrates or both<\/a>. Think industrially made cookies, cakes, potato chips and pizza.<\/p>\n\n\n\n<p>For many, the desire to change what they eat is triggered by concerns about potentially life-threatening health conditions, like diabetes and heart disease. The impact of diet on health is not a small problem. In fact, a recent multidisciplinary commission of 37 leading scientists from around the globe identified unhealthy diets <a href=\"https:\/\/doi.org\/10.1016\/S0140-6736(18)31788-4\">as a greater risk to human health<\/a> than unsafe sex and alcohol, drug and tobacco use combined.<\/p>\n\n\n\n<p>Many people know that most ultra-processed foods are not healthy. But the goal of cutting down on them can be so challenging that the <a href=\"https:\/\/doi.org\/10.1136\/bmj.m696\">majority of these attempts fail<\/a>. Why?<\/p>\n\n\n\n<p>In my <a href=\"https:\/\/sites.lsa.umich.edu\/fastlab\/\">Food and Addiction Science and Treatment Lab<\/a> at the University of Michigan, my colleagues and I are investigating one largely overlooked factor: These ultra-processed foods may be addictive, sharing more in common with tobacco products than with whole foods like apples or beans.<\/p>\n\n\n\n<h2>Addicted to ultra-processed foods<\/h2>\n\n\n\n<p><a href=\"https:\/\/scholar.google.com\/citations?user=DgrEMBYAAAAJ&amp;hl=en&amp;oi=ao\">I\u2019m a clinical psychologist<\/a> who studies addiction science, obesity and disordered eating. During my training at Yale University, it became clear to me that many people were showing classic signs of addiction in their relationship with ultra-processed foods \u2013 things like loss of control over consumption, intense cravings and an inability to cut down in the face of negative consequences.<\/p>\n\n\n\n<p><a href=\"https:\/\/scholar.google.com\/citations?user=LcV1NtkAAAAJ&amp;hl=en&amp;oi=ao\">So my<\/a> <a href=\"https:\/\/scholar.google.com\/citations?user=oVxF85gAAAAJ&amp;hl=en&amp;oi=ao\">colleagues<\/a> and I created <a href=\"https:\/\/doi.org\/10.1037\/adb0000136\">the Yale Food Addiction Scale<\/a>. It\u2019s a measure that applies the American Psychiatric Association criteria used <a href=\"https:\/\/doi.org\/10.1176\/appi.ajp.2013.12060782\">to diagnose other addictive disorders<\/a> to identify people who may be addicted to ultra-processed foods.<\/p>\n\n\n\n<p>Based on our current estimates, 15% of Americans meet the threshold for <a href=\"https:\/\/doi.org\/10.1093\/ajcn\/nqaa343\">food addiction<\/a>, which is associated with <a href=\"https:\/\/doi.org\/10.1111\/add.15446\">diet-related disease, obesity and poorer quality of life<\/a>. This prevalence is remarkably in line with that of <a href=\"https:\/\/doi.org\/10.1093\/ajcn\/nqaa343\">addictions to other legal and accessible substances<\/a>. For instance, <a href=\"https:\/\/doi.org\/10.1001\/jamapsychiatry.2015.0584\">14% of people in the U.S.<\/a> meet the criteria to be diagnosed with alcohol use disorders.<\/p>\n\n\n\n<figure class=\"wp-block-image\"><a href=\"https:\/\/images.theconversation.com\/files\/432502\/original\/file-20211117-27-zzaxay.jpg?ixlib=rb-1.1.0&amp;q=45&amp;auto=format&amp;w=1000&amp;fit=clip\"><img src=\"https:\/\/images.theconversation.com\/files\/432502\/original\/file-20211117-27-zzaxay.jpg?ixlib=rb-1.1.0&amp;q=45&amp;auto=format&amp;w=754&amp;fit=clip\" alt=\"French fries\"\/><\/a><figcaption>Some foods are perfectly formulated to be irresistible. <a href=\"https:\/\/www.gettyimages.com\/detail\/photo\/pile-of-french-fries-royalty-free-image\/103923812\">Mike Kemp via Getty Images<\/a><\/figcaption><\/figure>\n\n\n\n<p>It is clear from our research that people do not experience this addictive pull from all foods. Ultra-processed foods that have artificially high levels of fat and refined carbohydrates like sugar and white flour <a href=\"https:\/\/doi.org\/10.1371\/journal.pone.0117959\">are those that people eat addictively<\/a>. For example, chocolate, ice cream, French fries, pizza and cookies are some of the foods that people find most addictive. Not surprisingly, people report that they\u2019re very unlikely to lose control consuming broccoli, beans and cucumbers.<\/p>\n\n\n\n<p>But can these ultra-processed foods really be considered addictive? Or are people just overindulging in something they like? To help us answer those questions, my colleagues and I have turned to one of the last big debates in addiction science \u2013 whether tobacco is addictive.<\/p>\n\n\n\n<h2>The case that you can be addicted to tobacco<\/h2>\n\n\n\n<p>The idea that tobacco was addictive was hotly contested for decades.<\/p>\n\n\n\n<p>In contrast to drugs like alcohol and opioids, tobacco products are not intoxicating and allow people to go about their daily lives while using them. Tobacco products also don\u2019t cause life-threatening withdrawal symptoms, unlike alcohol and opioids. And there is little need to break the law to access or use tobacco.<\/p>\n\n\n\n<p>The largest global tobacco industry companies \u2013 colloquially grouped together as Big Tobacco \u2013 often highlighted the difference between tobacco and \u201cclassic\u201d addictive drugs. Increasing doubt about whether tobacco was truly addictive could help them avoid culpability for their industry practices and <a href=\"http:\/\/dx.doi.org\/10.1136\/tc.2005.013789\">place the blame on consumers<\/a> for <a href=\"https:\/\/doi.org\/10.1111\/j.1468-0009.2009.00555.x\">their choice to continue to smoke<\/a>.<\/p>\n\n\n\n<p>However, in 1988, the <a href=\"https:\/\/profiles.nlm.nih.gov\/101584932X423\">Surgeon General officially identified tobacco products as addictive<\/a>. This report directly contradicted Big Tobacco\u2019s stance that tobacco intake is a matter of <a href=\"http:\/\/dx.doi.org\/10.1136\/tc.2005.013789\">consumer choice driven by the taste and sensory effect<\/a> of their products.<\/p>\n\n\n\n<p>The Surgeon General based much of the <a href=\"https:\/\/profiles.nlm.nih.gov\/101584932X423\">classification of tobacco products as addictive<\/a> on their ability to trigger strong, often irresistible urges to use, despite a desire to quit and in the face of life-threatening health consequences. Another piece of evidence was the ability of tobacco products to rapidly deliver high doses of nicotine, which made them highly reinforcing \u2013 users want to repeat the behavior that gets them more of the drug. The final addiction criterion tobacco met was its ability to alter mood \u2013 increasing pleasure, reducing negative emotions \u2013 because nicotine affected the brain.<\/p>\n\n\n\n<p>It\u2019s a common misconception that the designation was based on the identification of a specific brain response to tobacco. In the 1980s, researchers knew that <a href=\"https:\/\/profiles.nlm.nih.gov\/101584932X423\">nicotine had some impact on the brain<\/a>. But little was known at that time about exactly how addictive drugs affect the brain. In fact, an objective biological marker of addiction \u2013 like a specific, measurable brain response that confirms someone is addicted to a substance \u2013 still does not exist.<\/p>\n\n\n\n<p>The Surgeon General designating tobacco as an addictive product raised the percentage of the <a href=\"https:\/\/doi.org\/10.1158\/1055-9965.EPI-13-0798\">public who viewed smoking as an addiction<\/a> from 37% in 1980 to 74% in 2002. The scientific case that cigarettes were addictive also made it <a href=\"http:\/\/dx.doi.org\/10.1136\/tc.2005.013789\">harder for Big Tobacco to defend<\/a> their practices.<\/p>\n\n\n\n<p>In 1998, <a href=\"https:\/\/doi.org\/10.1002\/pam.20050\">Big Tobacco lost a legal battle<\/a> that resulted in them paying billions of dollars to states to cover smoking-related health costs. The court ordered them to release secret documents that demonstrated they covered up the unhealthy and addictive nature of their products. Additionally, the decision placed major restrictions on their ability to market their products, especially to youth.<\/p>\n\n\n\n<p>Since 1980, the <a href=\"https:\/\/doi.org\/10.1001\/jama.2013.284692\">use of tobacco products in the U.S.<\/a> <a href=\"https:\/\/doi.org\/10.1001\/jama.2013.285112\">drastically declined<\/a> \u2013 a huge public health accomplishment.<\/p>\n\n\n\n<figure class=\"wp-block-image\"><a href=\"https:\/\/images.theconversation.com\/files\/432503\/original\/file-20211117-27-iwzw87.jpg?ixlib=rb-1.1.0&amp;q=45&amp;auto=format&amp;w=1000&amp;fit=clip\"><img src=\"https:\/\/images.theconversation.com\/files\/432503\/original\/file-20211117-27-iwzw87.jpg?ixlib=rb-1.1.0&amp;q=45&amp;auto=format&amp;w=754&amp;fit=clip\" alt=\"cigarettes in ashtray atop candy\"\/><\/a><figcaption>Foods high in sugar and fat have a lot in common with nicotine-filled cigarettes. <a href=\"https:\/\/www.gettyimages.com\/detail\/photo\/cigarettes-and-candy-royalty-free-image\/476900847\">Imstepf Studios Llc\/DigitalVision via Getty Images<\/a><\/figcaption><\/figure>\n\n\n\n<h2>Ultra-processed foods check the same boxes<\/h2>\n\n\n\n<p>Ultra-processed foods meet all the same criteria that were used to designate tobacco as addictive.<\/p>\n\n\n\n<p>Tobacco and ultra-processed foods alter mood in a similar way by <a href=\"https:\/\/doi.org\/10.3390\/nu11030596\">increasing pleasurable feelings<\/a> and <a href=\"https:\/\/doi.org\/10.1007\/s00213-008-1085-z\">reducing negative ones<\/a>. The <a href=\"https:\/\/doi.org\/10.1097\/MCO.0b013e328361c8b8\">high levels of refined carbohydrates<\/a> and fat in ultra-processed foods <a href=\"https:\/\/doi.org\/10.1038\/nn.2519\">powerfully activate<\/a> <a href=\"https:\/\/doi.org\/10.1126\/science.aav0556\">reward systems in the brain<\/a>.<\/p>\n\n\n\n<p>Ultra-processed foods are highly reinforcing \u2013 they can shape your behavior to keep you coming back for more. For example, teachers and parents use ultra-processed foods to <a href=\"https:\/\/doi.org\/10.1111\/josh.12294\">reward good behavior in children<\/a> to increase the likelihood that kids will continue to behave. In rats, researchers have repeatedly found that sweet tastes are <a href=\"https:\/\/doi.org\/10.1371\/journal.pone.0000698\">more reinforcing than even highly addictive drugs, like cocaine<\/a>.<\/p>\n\n\n\n<p>The high failure rates of diets make it painfully clear that ultra-processed foods can trigger strong, often irresistible urges to use despite a desire to quit. In contrast, nutritious, minimally processed foods like fruits, vegetables and legumes <a href=\"https:\/\/doi.org\/10.1371\/journal.pone.0117959\">do not meet these criteria for addiction<\/a>.<\/p>\n\n\n\n<p><a href=\"https:\/\/doi.org\/10.3945\/ajcn.2008.25825C\">Beginning in the 1980s<\/a>, the amount of unhealthy, ultra-processed foods in the U.S. exploded. At the same time, the tobacco companies <a href=\"https:\/\/doi.org\/10.2105\/AJPH.2019.305482\">Philip Morris<\/a> and <a href=\"https:\/\/doi.org\/10.1177\/0007650319870818\">RJ Reynolds<\/a> were buying up ultra-processed food <a href=\"https:\/\/doi.org\/10.1136\/bmj.l736\">and beverages companies<\/a>, including General Foods, Kraft, Nabisco and Kool-Aid. Philip Morris and RJ Reynolds took their <a href=\"https:\/\/doi.org\/10.1136\/bmj.l736\">scientific, marketing and industrial knowledge<\/a> in designing and selling addictive, highly profitable tobacco products <a href=\"https:\/\/www.nytimes.com\/2019\/03\/14\/health\/big-tobacco-kool-aid-sugar-obesity.html\">and applied it<\/a> to their <a href=\"https:\/\/doi.org\/10.2105\/AJPH.2019.305482\">ultra-processed food portfolios<\/a>. Although these tobacco companies eventually sold their food brands to international food and beverage conglomerates in the 2000s, they had already left their stamp on the modern food environment.<\/p>\n\n\n\n<p>The current societal narrative around the ultra-processed foods that dominate today\u2019s food environment is that people who struggle to eat them in moderation \u2013 <a href=\"https:\/\/doi.org\/10.1093\/ajcn\/nqab305\">the majority of Americans<\/a> \u2013 <a href=\"https:\/\/doi.org\/10.1007\/s11920-015-0552-6\">are just weak-willed<\/a>. It\u2019s the same story used to explain why people couldn\u2019t quit smoking. It ignores the fact that the industry that created cigarettes also developed and marketed many of these foods, deliberately working to enhance \u201ccraveability\u201d and create \u201c<a href=\"https:\/\/worldnutritionjournal.org\/index.php\/wn\/article\/view\/340\/286\">heavy users<\/a>.\u201d<\/p>\n\n\n\n<p>The addictive nature of these ultra-processed foods undermines consumers\u2019 free will and health in the service of profits. Yet, there is an important difference between tobacco and ultra-processed foods. We all have to eat.
