Jones<\/a>, <em><a href=\"https:\/\/theconversation.com\/institutions\/virginia-commonwealth-university-2978\">Virginia Commonwealth University<\/a><\/em><\/p>\n\n\n\n<p>A major problem with how food donation currently works in the United States is that a lot of the calories in those boxes and bags come from items that <a href=\"https:\/\/doi.org\/10.1080\/19320248.2013.816992\">aren\u2019t particularly healthy<\/a>, such as packaged snacks.<\/p>\n\n\n\n<p>This arrangement is troubling in part because of the <a href=\"https:\/\/frac.org\/wp-content\/uploads\/hunger-health-impact-poverty-food-insecurity-health-well-being.pdf\">high rates of nutrition-related illnesses<\/a>, such as heart disease and diabetes, among low-income people who rely on donated food.<\/p>\n\n\n\n<p>As a result, food banks and pantries around the country have been trying to boost the <a href=\"https:\/\/www.countyhealthrankings.org\/take-action-to-improve-health\/what-works-for-health\/strategies\/healthy-food-initiatives-in-food-pantries\">nutritional value of the food they give away<\/a>. Their clients are going home with more leafy greens and less processed cheese.<\/p>\n\n\n\n<p>That shift affects millions of people. About <a href=\"https:\/\/www.feedingamerica.org\/about-us\/press-room\/60-million-turned-to-charitable-food-2020\">1 in 5 Americans<\/a> obtained food at no cost from a food bank, food pantry or a similar program in 2020.<\/p>\n\n\n\n<p>Providing healthier food may sound like a worthy goal. But what happens if the people receiving it lack the ability to prepare, say, acorn squash? What if they would prefer more boxes of mac-and-cheese rather than a hard-to-slice winter vegetable that has mild, buttery taste when roasted in a hot oven? What if someone sees an acorn squash not as something to eat but as a fall-themed decorative item?<\/p>\n\n\n\n<figure class=\"wp-block-image\"><a href=\"https:\/\/images.theconversation.com\/files\/453666\/original\/file-20220322-13-n75o43.jpg?ixlib=rb-1.1.0&amp;q=45&amp;auto=format&amp;w=1000&amp;fit=clip\"><img src=\"https:\/\/images.theconversation.com\/files\/453666\/original\/file-20220322-13-n75o43.jpg?ixlib=rb-1.1.0&amp;q=45&amp;auto=format&amp;w=754&amp;fit=clip\" alt=\"Food pantry volunteers wearing masks organize boxes of produce.\" \/><\/a><figcaption>Food pantries, like this one in rural Virginia, are increasingly making produce a priority. <a href=\"https:\/\/newsroom.ap.org\/detail\/VirusOutbreakVirginiaFoodPantry\/76af17b68c354d60862180c94ee2e323\/photo?Query=food%20pantry%20produce&amp;mediaType=photo&amp;sortBy=arrivaldatetime:desc&amp;dateRange=Anytime&amp;totalCount=66&amp;currentItemNo=51\">AP Photo\/Steve Helber<\/a><\/figcaption><\/figure>\n\n\n\n<h2>Boiling it down to eight questions<\/h2>\n\n\n\n<p>As <a href=\"https:\/\/www.tandfonline.com\/author\/Cuy+Castellanos%2C+Diana\">a dietitian who studies food insecurity<\/a> and <a href=\"https:\/\/scholar.google.com\/citations?user=yT3ruakAAAAJ&amp;hl=en&amp;oi=sra\">an environmental studies scholar who<\/a> examines food-based inequalities, we have researched what we\u2019re calling an \u201cacorn squash problem.\u201d It happens when certain foods are given to people who don\u2019t like them or can\u2019t cook them.<\/p>\n\n\n\n<p>We\u2019ve identified eight main reasons donated food can be undesirable. If someone visiting a food pantry wouldn\u2019t say yes to all eight of these questions, the food may go to waste.<\/p>\n\n\n\n<ol><li>Is this <a href=\"https:\/\/doi.org\/10.5851\/kosfa.2019.e53\">edible<\/a>?<\/li><li>Is it something I <a href=\"https:\/\/doi.org\/10.1007\/s10900-018-0592-z\">want to eat<\/a>?<\/li><li>Would I <a href=\"https:\/\/doi.org\/10.1177%2F1524839915597898\">know how to cook<\/a> this?<\/li><li>Do I <a href=\"https:\/\/doi.org\/10.1111\/jhn.12615\">have the tools<\/a> required?<\/li><li>Can I <a href=\"https:\/\/www.eia.gov\/consumption\/residential\/data\/2001\/appliances\/appliances.php\">store it safely until I\u2019m ready<\/a>?<\/li><li>Do I have the <a href=\"https:\/\/www.ers.usda.gov\/webdocs\/publications\/45797\/11722_err40_1_.pdf?v=0\">time to prepare something with this<\/a> ingredient?<\/li><li>Do I have time to <a href=\"https:\/\/doi.org\/10.1155\/2019\/7174058\">consume it<\/a>?<\/li><li>Will I be able to <a href=\"https:\/\/doi.org\/10.1177\/0272684X16685252\">get all this food home<\/a>?<\/li><\/ol>\n\n\n\n<p>Researchers have found that people are <a href=\"https:\/\/doi.org\/10.1177%2F1524839915597898\">about half as likely to eat the turnips, beets and other root vegetables<\/a> they get from food banks as more familiar and more easily prepared veggies. If donated food goes to waste, it isn\u2019t helping people get enough to eat \u2013 undercutting its entire purpose.<\/p>\n\n\n\n<h2>Distributing recipes and holding cooking classes<\/h2>\n\n\n\n<p>The <a href=\"https:\/\/www.fns.usda.gov\/programs\">government provides much of this food<\/a>, but individuals, nonprofits, restaurants and grocery stores <a href=\"https:\/\/www.feedingamerica.org\/hunger-blog\/how-food-banks-and-food-pantries-get-their-food\">also contribute<\/a>. All told, these donations add up to about 6.6 billion meals a year. They are distributing <a href=\"https:\/\/www.mannafoodbank.org\/agency-access-and-information\/recipes\/\">cookbooks<\/a>, making <a href=\"https:\/\/theconversation.com\/an-app-that-nudges-people-to-eat-their-veggies-only-works-when-its-introduced-with-a-human-touch-106228\">recipe apps<\/a> available and offering <a href=\"https:\/\/www.foodforpeople.org\/programs\/nutrition-education\">cooking classes<\/a>.
